PEP-IN-YOUR STEP PEPPERMINT CHOCOLATE: guest post by Predominantly Paleo

Jennifer is a mother of 3 and wife in pursuit of better health for her family. 
After being gluten free for about 4 years, and having a multitude of chronic health issues, she realized there was still a lot of junk in her pantry and change was needed.  Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo,  meaning they are free of grain, gluten, dairy, and refined sugar, but makes allowances for a few treat and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, proven by all of her amazing dishes.  



Do you ever have that deer in headlights feeling when you need to come up with a crowd-pleaser on the spot? Should it be healthy, should it be sensitive to dietary sensitivities, would people prefer treats or savory bites…it can all be so overwhelming sometimes.  I personally always want to offer something that is not made of complete junk, but will be tasty enough to please the masses.  And furthermore, should be simple! THIS, my friends, can be quite a chore.  We all have more on our calendars than there are hours in a day, so this super quick recipe is fantastic for parties as well as for a treat in the comfort of your own home.  But be forewarned, they are addictive!


INGREDIENTS:
  • 1/2 cup Enjoy life chocolate chips, melted
  • 3 tablespoons coconut oil melted
  • 3/4 teaspoon real peppermint extract
  • a candy mold (either plastic or silicone)

INSTRUCTIONS:
  1.     Combine all ingredients in a bowl
  2.     Pour into candy mold
  3.     Freeze for around 15-20 minutes or until solid


   NOTE: Because these do not use the funky stuff like soy lecithin, they can and will melt.  I like to keep them frozen until ready to serve.
