INGREDIENTS:
- 1 ½ lb chicken thighs
- 1 large onion, sliced
- 3-4 carrots, sliced
- 1-2 cups broccoli
- 2 Tbsp grated ginger
- 2 cloves garlic, minced
- 2 Tbsp coconut aminos (or gluten-free soy sauce)
- ½ cup water
- 1 tsp Chinese Five Spice (found in the spice aisle)
- Salt & pepper to taste
INSTRUCTIONS:
- Preheat oven to 350F.
- Season chicken with Chinese Five Spice and pepper
- Brown in a dutch oven or large cast iron frying pan
- Remove chicken when browned
- Add onion, garlic and ginger, stirring to soften
- Deglaze pan by adding water and soy sauce, scraping bottom to loosen browned bits
- Return chicken to the pan, along with the carrots
- Give all a quick mix to coat chicken with sauce and muddle the flavors
- Place dutch oven/cast iron pan in the preheated oven and bake for about 45 minutes
- Stir in the broccoli after about 20 minutes and turn chicken
- Remove from the oven when the thighs are cooked thru and serve with your favorite sides. Enjoy!
