DOUBLE CHOCOALTE STRAWBERRY CAKE: a guest post by Gloria

I'm incredibly excited to share this weeks guest recipe from Gloria. 

About a year ago Gloria and I began corresponding regarding healthier food choices and views on following a Paleo meal plan.  I began following Gloria's progress on Instagram and have enjoyed watching her become healthier and stronger everyday.  


I'm incredibly excited to share her recipe for a Double Chocolate Strawberry Cake.  It's a simple and delicious recipe, which has become a hit with my family and I'm sure it will be with yours as well.

Grain-Free Double Chocolate Strawberry Cake



DRY INGREDIENTS:
WET INGREDIENTS:
  • 6 whole eggs + 4 egg whites
  • 1/2 c. honey
  • 1/4 c. coconut oil
  • 1/4 c. maple syrup
  • 1/4 c. almond milk
  • 1 tsp vanilla extract
OTHER INGREDIENTS:
  • 1-1/2 c. strawberries, sliced
  • 1 c. dark chocolate, chopped

INSTRUCTIONS:
  1. Pre-heat oven to 350F and grease a 9" baking pan
  2. In a medium bowl, combine all dry ingredients
  3. In a second large bowl, whisk eggs and egg whites together with an electric mixer
  4. Add remaining ingredients to eggs
  5. Slowly add dry ingredients to wet, mixing thoroughly
  6. Stir in 1 c. strawberries and 1/2 c. chopped dark chocolate
  7. Pour batter into greased pan and bake for approximately 30 minutes or until toothpick comes out clean
  8. Add chocolate onto warm cake and allow it to melt, then spread
  9. Place remaining strawberries on top and continue to cool or serve warm
  10. ENJOY!
