Everyone is in Pumpkin mode right now, but I've moved back into chocolate. As a kid did you knock on doors in hopes of pumpkin flavored items? Of course not, it was all about the chocolate and my head is back in the Halloween chocolate game.
CHOCOLATE COCONUT BUTTER
INGREDIENTS:
- ½ c coconut oil, melted
- 2Tbsp vanilla extract
- 1/4 c. raw honey
- 1/8 tsp. sea salt
- 1 c. Enjoy Chocolate chips
DIRECTIONS:
Place shredded coconut, coconut oil, vanilla, raw honey and sea salt in food processor (or Vitamix) and blend for 3-5 minutes.
Add chocolate chips to the coconut mixture and pulse for 15-30 seconds
Place coconut butter in a glass bowl and refrigerate for 15 minutes or until mixture begins to harden a bit or not...go ahead and eat it ;)
YOU NOW HAVE CHOCOLATE COCONUT BUTTER
CHOCOLATE COCONUT BUTTER TRUFFLES
If you want to make truffles, you'll definitely need to let the mixture harden a bit, otherwise it will be too soft.
Remove from refrigerator and roll into balls (size is up to you)
Roll in coating (optional) and place on dish lined with wax paper
Continue until all coconut butter is used and refrigerate until ready to serve
The coconut balls will be hard right out of the refrigerator, so don’t make them very large. They will soften after 5-10 minutes.
These look so amazing! I wouldn't mind getting a few of these for Halloween :)
