INDIAN SPICED CHICKEN PIZZA




How many times can I say I love cauliflower crust? I'm sure you'll see plenty of other variations on the crust, but I'm finding it to be a great leftover type of food. Make a crust, throw leftovers on it, call it the Blah Blah Blah Pizza and you're set!  

Usually I have cooked chicken readily available in my refrigerator and toss it with a random marinade. A great sauce or marinade to have is Tandoori, it's spicy and a nice change from BBQ and a traditional herb sauce. 


Gluten Free Pizza Crust

INGREDIENTS:
  • Cauliflower
  • 2 eggs
  • 1 tsp. oregano 
  • 1 tsp. onion powder
  • 1/2 tsp. sea salt
  • 2 tsp. Gobi Aloo Seasoning
  • 2 chicken thighs (or leftover chicken if you've got it)
  • 1 Tbsp Tandoori sauce (undiluted)
  • Red onion (optional)
OTHER THNGS YOU'll NEED

  • Parchment paper
  • Food processor (it works slightly better than a blender)
  • Cheesecloth


MAKING CRUST MAGIC:

1. Pre-Heat Oven to 400F


2. Chop cauliflower into small pieces, making it easier to use in your food processor

3.  Pulse cauliflower until it forms tiny little flakes


4. Microwave cauliflower for 2 minutes and allow to cool for at least 10 minutes 


5. Place 2 cups of the cauliflower in a cheese cloth and ring it out. Seriously, squeeze the heck out of it to drain all the liquid, that's the key!

6. Place drained cauliflower in a medium bowl, add the eggs, seasoning and stir until completely blended


7. Place parchment paper on a baking sheet, place dough onto paper and press into a circle.

8. Place crust into the oven and bake for 15 minutes.

9.  While crust is baking, chop chicken thighs into nice bite size pieces and toss with the Tandoori sauce.

10.  Place chicken pieces in a skillet and cook all the way through. Set aside until crust is slightly golden brown (approx. 15 minutes)


11. Remove from oven and top with the Tandoori chicken, red onions (cheese is optional), tomatoes or anything else that strikes your fancy,  drizzle with olive oil and bake for up to 10 more minutes.


10. EAT UP!
