These Almond-Sunbutter balls of goodness are a great pre or post workout or just a great snack to have handy. The molasses has a robust, bittersweet flavor that reminds me of gingerbread without all the spices. It's a very simple and quick snack that the kids can help make. So, as you will see, the recipe only yields 8, that's because you may want to eat them all right away (I speak from experience) and they're quick to make if you want more. It's just a safe number people.
YIELDS 8
INGREDIENTS:
- 1/2c raw smooth almond butter
- 1/2c Sunbutter
- 1 Tbsp Blackstrap molasses
- 2 tsp ground flaxseed
- 1/2c unsweetened shredded coconut
- In medium glad bowl, combine both almond & Sunbutter
- Add flaxseed & molasses
- Refrigerate for 5-10 minutes (just to allow them to harden a bit)
- Remove from refrigerator and roll into 8 balls
- Roll balls in unsweetened coconut
- Refrigerate for another 5-10 minutes...or just eat
