SWEET POTATO & BACON SOUP

This is a quick recipe, if you have all the ingredients readily available.  Luckily the ingredients seem to always be in my kitchen for a quick comfort meal.



INGREDIENTS:
  • 1 cup sweet potato (see comments)
  • 1/4 cup bacon, diced
  • 1/4 cup onion, diced
  • 1/2 cup coconut milk (whole milk or heavy cream works too)
  • 1/2 cup water
  • salt & pepper to taste
INSTRUCTIONS:

1. Cook bacon and onion in soup pot over medium heat until the bacon is crisp and onions are soft.

2. Add remaining ingredients; stir together, cover and simmer for 10 minutes. 

3. While simmering, go about your business and get other things done. 

Serves about 2, though I could eat all of this myself.

Comments: Regarding the sweet potato, I use Trader Joes frozen nuggets, but have used canned as well as leftover cooked sweet potato.  Depending on which you use, the final product will have varied colors as well as taste...fresh vs canned...obviously there will be a difference. Use what's easiest for you.
