MEAT & EGG STUFFED SWEET POTATO SKINS

I love leftovers, I feel like an Iron Chef when I see food looming in my kitchen, they're just waiting to be made into something fantastic.  This is a breakfast (or anytime meal) that can be made with any type of meat and 10 minutes of your time.

INGREDIENTS:
  • 1 sweet potato, cooked 
  • 1 cup meat
  • 2 eggs
  • 2 tbsp coconut oil
  • salt & pepper to taste
  • bacon, cooked (optional)

INSTRUCTIONS:
  1. Whisk eggs and a pinch of salt in a small bowl, set aside.
  2. Cut sweet potatoes in half.
  3. Melt coconut oil in large skillet; place sweet potatoes meat side down, fry for 2 minutes and remove from the skillet onto a paper towel.
  4. Using the same skillet, heat the meat of your choice.
  5. Cook the eggs any way you like (I like a thin crepe like egg cut into strips, but my husband likes scrambled).
  6. Pile cooked egg & meat onto the sweet potato.
  7. Sprinkle with bacon and any type of sauce you may have handy and are craving.





COMMENTS: This is meant to be a super easy meal, left open so you can use whatever leftovers you might have handy.
