- 1 dozen eggs
- 6 slices Canadian bacon (sliced into whatever shape you like)
- 3/4 cup diced pineapple
- 1 tbsp bacon grease
- 3/4 cup marinara sauce (optional)
- Sea salt and black pepper to taste
- Coat a large oven-proof skillet with bacon grease
- On low heat, add the Canadian bacon until brown and cook until light brown.
- While the Canadian bacon is cooking, whisk together the eggs , salt & pepper, set aside.
- Turn the heat up to high and add pineapple to the skillet and lightly brown.
- Pour the egg mixture onto the bacon and pineapples and set the heat to low and cook for 5-6 minutes. Make sure the heat is not too high, otherwise the eggs will burn.
- Once the eggs look mostly cook, place skillet in the oven under the broiler and cook on high for 5 minutes, or until the eggs are cooked.
- Remove from the broiler and slice.
- Add warmed marinara on-top as well as additional toppings if you like.
Yum yum yummy!! I've actually been biankg all day yesterday there is nothing better than having a relaxing day in the kitchen tinkering on recipes and tasting all the fresh baked goods, especially on Mother's Day together with mum herself!
