You know, sometimes less is more. I know people blog these incredibly long posts going on and on about their day, but there are just times when you've got nothing to say except - BACON!
- 3 whole eggs + 1 egg white (use 4 whole eggs if you want, but it makes it taste slightly eggy)
- 2 tbsp bacon grease - melted
- 1/2 cup coconut milk, full fat
- 1/4 cup almond flour - fine grind
- 1/4 cup coconut flour
- 1/2 tsp salt
- 1/4 tsp garlic granules
- 1/4 tsp baking powder
- 3 strips cooked bacon bits (1/2 strip per muffin)
INSTRUCTIONS:
- Grease or line 6 muffin tins and Preheat oven to 400 degrees
- Whisk eggs and coconut milk in small bowl
- In a medium bowl, mix almond & coconut flour, salt, garlic and baking powder
- Add the egg mixture to the flour mixture and stir until well mixed and no visible lumps
- Add bacon grease to the batter and stir until completely combined
- Fill the muffin tins 3/4 of the way
- Add bacon to each muffin, using a knife (or your finger) gently swirl the bacon into the batter
- Bake approx. 15-20 minutes or until golden brown
You've got bacon, you've got muffins.... What else do you really need to say? :D
