BACON MUFFINS

You know, sometimes less is more. I know people blog these incredibly long posts going on and on about their day, but there are just times when you've got nothing to say except - BACON!

Bacon muffins

INGREDIENTS:
  • 3 whole eggs + 1 egg white (use 4 whole eggs if you want, but it makes it taste slightly eggy)
  • 2 tbsp bacon grease - melted
  • 1/2 cup coconut milk, full fat
  • 1/4 cup almond flour - fine grind
  • 1/4 cup coconut flour
  • 1/2 tsp salt
  • 1/4 tsp garlic granules
  • 1/4 tsp baking powder
  • 3 strips cooked bacon bits (1/2 strip per muffin)

 INSTRUCTIONS:
  1. Grease or line 6 muffin tins and Preheat oven to 400 degrees
  2. Whisk eggs and coconut milk in small bowl
  3.  In a medium bowl, mix almond & coconut flour, salt, garlic and baking powder
  4.  Add the egg mixture to the flour mixture and stir until well mixed and no visible lumps
  5. Add bacon grease to the batter and stir until completely combined
  6.  Fill the muffin tins 3/4 of the way
  7. Add bacon to each muffin, using a knife (or your finger) gently swirl the bacon into the batter
  8. Bake approx. 15-20 minutes or until golden brown
