ORANGE BALSAMIC CHICKEN SALAD

Completely lost track of time and didn't get to the grocery store to pick up what I wanted for snack and lunch, so I had to make due with what I had available...again.   Using leftovers I made a quick and easy chicken salad (sans mayo).   It's a great anytime meal and can be made days in advance, letting it marinate only makes it taste better and omitting lettuce removes the soggy factor.  So you'll probably read the ingredients, scrunch your brow and question the orange and vinegar, but let me tell ya it's a great dressing alternative. 



INGREDIENTS:
  • 6oz. Grilled chicken breast
  • 1-1/2 Tbsp balsamic vinegar
  • 1/2 tsp olive oil
  • 1 small orange, diced
  • Pinch of sea salt
  • Sliced almonds (optional)
INSTRUCTIONS:

1. Cut chicken into bite size pieces and place in glass bowl
2. Pour balsamic vinegar and olive oul onto chicken and stir
3. Add diced oranges and sea salt and toss together
4. Refrigerate for 30min, but if you can't wait go ahead and eat it! :)
5. Top with sliced almonds before eating (optional)
