SUNBUTTER COOKIE & CHOCOLATE SANDWICH










I was going to write some cute little story to go along with this, but then changed my mind for 4 good reasons. 

  1. I have a broken finger...again! Typing is proving to be more difficult than it should be. (Damn my love of Jiu Jitsu)
  2. It's a beautiful day outside and I wont waste your time with ramblings
  3. It' a cookie sandwich, lets get with the drooling
  4. See reason #1 (this has already taken 5 min)







INGREDIENTS:

 



FILLING:

      Place shredded coconut, coconut oil, vanilla, raw honey and sea salt in food processor (or Vitamix) and blend for 3-5 minutes.
      Add chocolate chips to the coconut mixture and pulse for 15-30 seconds
    Place coconut butter in a glass bowl and refrigerate for 15 minutes or until mixture begins to harden a bit or not...go ahead and eat it ;)
    YOU NOW HAVE CHOCOLATE COCONUT BUTTER
    Take your Sunbutter Cookies and spread a think layer of the coconut butter on one side, then sandwich together.

    BAM! You now have yourself a sandwich!
