BALSAMIC-BERRY-CHOCOLATE COOKIE

This recipe is strawberries cooked in balsamic vinegar on top of a cookie and then topped with dark chocolate.  There are a lot of different flavors going on, but it's one of my favorite indulgences.

There's really no "right way" to assemble the cookie.  You can just pour the berries onto the cookie and sprinkle with chocolate, drizzle the melted chocolate onto the cookie...whatever you're comfortable with. Also, if you're not digging the bitterness of the balsamic, add a little coconut sugar, but I find the chocolate works out really well.

COOKIE
  • 3/4 c almond flour
  • 1/4 c coconut flour, sifted
  • 1 large egg, whisked
  • 1 tbsp maple syrup (the real stuff)
  • 1 tsp baking soda
  • 1/4 tsp sea salt 
  • 1/4 c coconut oil, melted

TOPPING
  • 2 c strawberries, fresh or thawed
  • 2 tsp balsamic vinegar
  • 1/2 c dark chocolate, melted (optional)
  • 4 tbsp coconut creme (optional)
INSTRUCTIONS:
  1. Pre-heat oven to 370F.
  2. Line a baking sheet with parchment paper
  3. Place all the cookie ingredients EXCEPT the coconut oil, in a medium bowl and mix.
  4. Once mixed, add the coconut oil.
  5. Let the mixture sit for 5-10 minutes to allow the coconut flour to absorb the moisture.
  6. Divide the dough into 4 parts and flatten into a large cookie; place on the baking sheet, bake for 10 minutes
  7. While the cookies bake, prepare the strawberries
  8. Place all the strawberries into a pot and add the balsamic vinegar; allow to cook for 3-5 minutes or until tender, remove from heat.
  9. Remove from the cookie from the oven and allow cool
  10. Once cooled, assemble cookie, placing strawberries, coconut creme and chocolate on top.
