BANANA PANCAKES

This super simple pancake recipe can be eaten while on the 21 Day Sugar Detox or Whole30 program.




  • 1 Green tipped banana

  • 1/3 c Coconut milk

  • 2 eggs + 1 egg white

  • 1-1/2 tbsp Coconut flour

  • 1/2 tsp Vanilla

  • 1/4 tsp Baking soda

  • 1/4 tsp salt



  1. In a blender (I use the Magic Bullet) blend the banana and coconut milk

  2. Add eggs and blend until smooth

  3. Add remaining ingredients

  4. Pour 1/4 of the mixture in a pre-heated and greased omelet pan and cook like you would cook any other pancake (watch for the bubbles, flip before it burns, etc)


TA-DA!

Makes 4 fluffy pancakes that you don't have to share with anyone ;)

COMMENTS: The Magic Bullet is my most favorite thing today, minimal clean-up and it does all the work, well, except for the cooking part.  This recipe works well in a blender too, or just good old fashion elbow grease. Speaking of grease,  I greased the pan with 1 tsp of melted coconut oil for each pancake.  Also, I topped with cinnamon coconut cream and a few banana slices, which is super simnple... Coconut Cream + Cinnamon + Blend= Topping
