BAKED CHOCOLATE DONUTS

Incase you haven't noticed, my recipes are usually quick and easy, donuts are no exception.  When it comes to everyday baking I feel it's important to keep things simple - who has time for intricate recipes every morning? Not this girl!
 There are loads of donut recipes out there that will make the traditional, light & fluffy, fried rings of sugary goodness. This recipe is a very basic, quick-n-dirty, 21-Day Sugar Detox friendly and egg free kinda thing.  The texture is a bit dense, but great for dunking in coffee.

If you want to add sweetness and aren't doing a 21-Day Sugar Detox, dip the donuts in chocolate chips.


Chocolate Covered Baked Gluten-Free Donuts
NOT 21-Day Sugar Detox friendly donuts


INGREDIENTS: 



INSTRUCTIONS: 
  1. Pre-heat oven to 350F and lightly grease donut pan or prep donut baking machine
  2. In a blender (or food processor) puree bananas until completely smooth
  3. Add cocoa powder, coconut milk, vanilla extract and cinnamon to banana puree and blend for 15 seconds
  4. In a medium size bowl, combine coconut flour, baking soda and sea salt with a fork until well incorporated
  5. Add puree to flour mixture and stir until all ingredients are combined
  6. Lastly, add melted coconut oil into batter and stir together
  7. Pour into donut moulds and bake for 15 minutes, use the toothpick method to make sure they're cooked all the way through and remove from oven
  8. While donuts are cooling, melt chocolate chips in a small glass bowl
  9. Dip tops of donuts into melted chocolate and place on parchment paper lined platter
  10. Place in refrigerator until chocolate hardens
