- 2 eggs + 2 egg whites
- Sliced onions (just enough for the 2 servings...up to you)
- 2 slices well cooked bacon - crumbled
- 1/4 cup sweet potato puree
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- Bacon grease (or grease of your choice)
Pre-heat oven to 400F
Grease ramekins with grease and set aside
Mix 2 eggs, salt, pepper and puree in small bowl
In a separate bowl, beat the 2 egg whites until fluffy
Fold the egg whites into the egg & sweet potato mixture
Distribute the egg mixture between the 2 ramekins
Place bacon and onion on each of the egg mixtures and using a knife, slowly mix, incorporating it into the eggs
Place into the oven and cook for 10 minutes or until golden brown and "poofy"
