BANANA CAKE

This is the cake base for my Banana Coconut Dream cake.  The cake is dense, so if you want something light and fluffy, this isn't for you...sorry. Be sure to read instructions as well as my comments. Baking is suppose to be fun and in my opinion to to labor intensive, that's why I use a bowl and a blender most of the time. Tweak the heck out of this, make it your own...ENJOY!
     
  • 4 very ripe bananas 
  • 6 eggs 
  • 14oz can coconut milk (full fat or light...doesn't matter)
  • 1 c. coconut flour
  • 1/2 c coconut oil - melted 
  • 2 tbsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 banana  (reserve the 1 banana for cake assembly)
  • 2-3x Coconut Creme Topping (set aside for cake assembly)
  • Unsweetened shredded coconut (optional for cake assembly)

  1. Pre-heat oven to 350F
  2. Grease 2 12in cake pans (or use 1 Big Top Cupcake)
  3. In large bowl, mix coconut flour, salt & baking soda together with a fork
  4. Place eggs, banana (except the 1 set aside for later), coconut milk, oil and vanilla in a blender
  5. Blend until everything looks smooth and beautiful (about 15 seconds)
  6. Pour the wet ingredients into the dry ingredients and with a little elbow grease, mix everything together
  7. Evenly distribute/pour the cake batter between the 2 pans
  8. Place on the middle rack in the oven and bake for 20-30 minutes or until golden brown (or use the clean toothpick in the center trick)
  9. Let cool and slice each of the rounds in half

ASSEMBLY TIME, here's the pattern...
     
  • Thin layer of cake
  •  
  • Thin layer of Coconut Creme Topping (to much will make the cake super heavy)
  •  
  • Sliced banana
  •  
  • Repeat 2 more times
  •  
  • Frost the top of cake with remaining Coconut Creme
  •  
  • Gently pat the coconut on top of the Coconut Creme Topping
  •  

COMMENTS: If the house is to hot, I've noticed the assembly does not go well, that happens with coconut creme...ugh!  You don't have to add the sliced banana between layers, heck, you don't have to have layers. I've made a trifle using the cake and all the assembly ingredients. At the end of the day, it all tastes the same.
